Using the context menu - Administration & Maintenance | Database Properties will open the Database Properties dialog.

The dialogs holds two tabs, General and Options. The General tab shows information about the database, like the database owner, current size and selected default collation. The Options tab let's you view and change some settings for the selected database.

For a large part, these settings can be found in the MS SQL Server Enterprise Manager as well - check the MS SQL Server documentation for the exact meaning of the properties.
If you use the OK button, these properties will be changed.
Note:
When using SQL Server 7, the "Collation" and "Recovery model" boxes are disabled.
